I just want to make 3 cupcakes

It depends on the recipe, if a recipe for a dozen cupcakes has 2 eggs, you can only cut it in half and use one egg.  Just pick the recipe you want and adjust everything down.  So if going from two eggs to one, cut everything in half, if going from 3 eggs to one cut everything else by 3.

Baking is a science, so you can’t really just wing it. Do what pixiecat said and find a small recipe you want to use and half it. I’d say a small recipe makes about 12 cupcakes. I wouldn’t try to make just three cupcakes though, because it’s pretty impossible to accurately separate an egg in half. Good luck!

I second the idea of making a half recipe and freezng the rest. Even if it were possible to fraction down the recipe accurately to make just 3 cupcakes, it will propbably still come out weird. It’s tough to bake such a small quantity of something like cupcakes, which is why the smallest recipe you’ll likely find is for 12.

I would suggest just halfing the entire recipe and make six. Only because if you divide everything in the recipe by 4 (which will take you down to the three you want to make), you can’t exactly get half of a full egg in perfect proportions. 

So if the recipe calls for two eggs, use one.

You can also find a good cupcake recipe on all recipes.com and change the quantity. It auto adjusts the ingredients down.

There are recipes out there for 1 or 2 cupcakes if you only want a personal batch.
