The Brown Sugar Cookies from Cooks Illustrated are a revelation. They're the only non-chocolate dessert that I've ever considered to be worth making more than once! ;) Or if you want something very "fall," I suggest apple cinnamon muffins. Yum!! (I love baking, can you tell?)

And I am also in the mood to make pumpkin apple cake with pumpkin frosting! I am going to find recipes online for pumpkin apple cake, double it, and layer it with the frosting. Now I am hungry.
Well, my first suggestion is to pick up the new Martha Stewart Living with all the pie slices on the cover. TONS of great recipes!
I baked the scone recipe this morning, and it was delicious. I'm on a pumpkin kick as well. I modified a few things to my liking, but I stayed pretty true to the recipe. I also made a baguette today and it was super easy, if you're ever looking for a quick bread.

Oh, those sound good! I'm going to write all these down for the coming weeks! lol. I am home alone in the afternoons with nothing to do but...bake! lol. Or be online. = )
These pumpkin cookies are wonderful and moist!
Pumpkin Cookies
1 1/2 cup Crisco (I use butter)
1 c sugar
2 c brown sugar
2 eggs
1 tsp vanilla
4 c flour
2 tsp baking soda
1 tsp salt
2 1/2 tsp cinnamon
2 c oatmeal
1 3/4 c pumpkin
chocolate chips! (i usually put in a 12 oz bag or about 2 cups)
combine all the ingredients except OATMEAL and CHOCOLATE CHIPS
then stir in the oatmeal and chocolate chips
bake @350 for 12-14 minutes
I just made Pumpkin Spice Bagels...yea that's right bagels from scratch. They actually weren't hard at all and pretty tasty too.

Pumpkin Spice Pancakes. Add about 1/2 cup pureed pumpkin to 2 cups pancake batter. Add 1 Tbsp of pumpkin pie spice. The pancake will actually cook around the puree, so the center of the pancake will be kinda like a custard, instead of bread-y. I like them with nutmeg butter & pecan syrup.
Mrs Fro Yo has a great recipe for Pumpkin Spice Whoopie Pies and I made them last week with my niece. They were a HUGE hit. I posted the picture of them on my facebook page and ALL of my friends messaged me for the recipe, LOL Check out Mrs Fro Yo's personal blog for the recipe 
Whoopies. I actually found Red Velvet whoopies at the store one time. They were soooo good.
Has anyone made pumpkin cobbler? I came across a recipe and thought it sounded good but was wondering if anyone else had made it before who has feedback on it.

@Scottielass: my hubby isn't a fan on anything pumpkin unless it's pie. So I would be cooking more pancakes for me. Mwahahaha.
