My Fiance today brought up the ice cream buffet after he rejected the idea before…lol yayy its back!
My only concern since this is going to be handled by us and not a catering place or the venue– Im not sure how to keep the ice cream cold enough for say two hours on the table? Someone once suggested a bowl of Ice – some water and some salt. How much water do we add? I have no idea.
I need any suggestions to make this work!

The only ice cream buffet/bar I’ve ever experienced was done by the hotel, so I don’t have any tried and true advice.
That being said, Pinkberry (the frozen yogurt place) does froyo catering and what they do is making individual servings in the cups and then put them in insulated containers/boxes with dry ice and then each person gets a cup of their own. I think these cups are filled right before they are delivered.

You can rent an ice cream freezer. Place it beside the table and cover it with a matching tablecloth. That way you can have someone appointed to bring out more ice cream when needed.
Rental companies often have insultated stainless steel bins that you can fill with ice then nestle the ice cream in the ice.
Also check your local rental companies to see if any of them rent an ice cream cooler like this. It keeps ice cream cold for 6 hrs.

@Mrsgurzakovic: The Cuisnart bowl is a replacement or second bowl for a Cuisnart Ice Cream maker. It’s not very big – 7x7x6″ and only holds 2 quarts.

@Mrsgurzakovic: It looks like they offer catering too so good luck! I googled Pinkberry and New York and it looks like they have some locations, although perhaps they’re not close enough. Regardless, you can probably just model your ice cream delivery/transportation after theirs. Maybe you can do a test run before so you can make sure it works?
