I would get some cake pedestals of different heights (like at the thrift store or something) and display the cakes on them spread out over a table. We are having cupcakes and putting them on a cake stand with different layers... you can buy them online. They have different layers where the cakes wouldn't be sitting on top of one another. Good luck!!
i second the pedestals of differing heights option. i think it could look really cool.
The only thing is - the cakes are pretty ugly. Think - plain white with boring piping. I talked to them about doing something a tad bit fancier, but it's not going to happen.
Any ideas of how to spruce it up?
Depending on the theme of your wedding or your decorations, you could always have someone add real flowers, premade gum paste flowers, etc at the last minute just before the cakes are brought out for display.
You can also tie ribbon around the base of the cakes- it can be prepared ahead of time- fused to a waterproof lining so you don't get staining through the ribbon from the ice cream.
I am doing one from Coldstone creamery, they do gumpaste flowers, etc., and can do a lot of colors (i.e., not boring). They are also 3 tiered. Maybe you should look at a few other options before going with that particular vendor?

FI has his heart set on having an ice cream cake for our wedding cake. It's affordable and there's a great ice cream shop that makes yummy ones...
My problem is how to display the cake for cutting.
They come in rounds, squares, or rectangles - but they do NOT recommend stacking (even the small ones) because they are so heavy.
I was thinking putting a some rounds on a tiered cake stand - or perhaps just one round on a cake stand - but it doesn't sound all that exciting to me. Plus, it's not like the cake will be grandly decorated.
I don't want to go the fake cake route (just for photos) either.
Any ideas??
