I want to surprise my SO with a fancy dinner tonight. He is a meat and potatoes kind of guy, but he likes seafood as well. I am a pretty accomplished cook, so it’s ok if it’s a fairly complicated recipe. We pretty much have nothing on hand, so I am going to the market and can pick up any ingredients we will need… Any ideas bees? Have you made anything lately that knocked your socks off?

I like to do twice baked potoes and a nice cut of prim rib. We usually have some kind of salad rolls to start (I make the cinnamon butter from Texas road house because Darling Husband loves it).

If he likes seafood, I have used a recipe for shrimp scampi that is out of this world and is the easiest thing ever. It’s actually from Rachel Ray – it’s called Super Scampi and you make everything in one pot! I was skeptical at first because of the whole “one pot” thing, but it came out great and it’s a big hit every time I make it.

Thanks Ladies for the suggestions… I went with @mwitter80:‘s idea for risotto and seafood. I just did the risotto traditional style, with parmesan cheese. I was going to make scallops, but Whole Foods had a sale on salmon, so I made that with lemon butter and caramelized onions, and a side of steamed broccoli. It was great! I appreciate the help 🙂 I will definitely keep the other suggestions for next time!
