We got a pound of watercress in our first CSA box. I am about to start scouting recipes online and in my cookbook library to figure out what to do with it, but if any Bees out there have a favorite watercress recipe or a suggestion for how to use it, please point me toward it!

watercress goes great with a natural healthy fat since it can be peppery, the fat tends to balance it.
Try a watercress, avocado and a mango salad with a citrus dressing. Add chicken for a complete meal.
As the other PP posted, it also is great on sandwiches. I really like watercress with a lox (smoked salmon) and creamcheese sandwich or crackers as an appetizer.
It even goes well fresh on top of a great omelette.

I have a recipe for watercress hollandaise that makes eggs benedict positively sublime.
I really like the taste of watercress. Upon hearing this, my sweet boyfriend found a recipe for a watercress salad made with avocado and pineapple that was completely delicious. The recipe is on Food52.

My dad does peanut butter and watercress sandwiches (barf). But all of the ideas above sound delicious.

I use it to make my salad a bit more interesting. It’s also yummy as a soup.

It’s great in a salad. You can even eat the flowers if it is organic (otherwise the flower tends to take up too much pollution for that to be advised).
