We attended a wedding like this recently, and they had one groomsman walk with two girls. It was especially cute because the groomsman was the groom's teenage cousin who hammed it up with two lovely older girls on his arm!
I moved this to "Bridesmaids" for you - did you mean to post it in DIY? I can move it back if so, but I didn't 'get' the connection, so I assumed it was a mistake. :)
We have an uneven bridal party, and we're solving the walking in "problem" by having the groomsmen all enter the front of the church at once, and then having each bridesmaid process down the aisle by herself. Walking out, there's going to be some one girl-two guy action.
My sister had an uneven bridal party and we (the girls) walked in by ourselves while the guys weer already at the front. On our way out we walked with a guy but the extra girls walked with the flower girl and ring bearer. It was really cute and made it so nobody had to walk alone.
I was in a wedding where I was the extra girl. The men came in from the front, so the girls processed one by one into the ceremony. I was standing farthest from the bride, last to exit, so we talked about two girls walking out with one guy, but when the time came, the aisle looked too narrow, so I nixed the idea at the last second and walked out by myself after the last couple. It really wasn't a big deal.
We have one extra bridesmaid too, the guys are already going to be at the front of the church at the start of the ceremony, but afterwards, my brother is going to walk back up the aisle with my two best friends. and if you knew my brother, you would know how funny/cute its gonna be! At the reception, he'll get announced with both girls too but my one bridesmaid is going to dance with her fiance during the second dance when the whole party joins us after our dance. I was a little stressed about it all at first, but now I see its not really a big deal at all!
I will probably have a pretty darn mismatched party -- 3 vs 5. I was planning on having them just come in alone and alternate -- girl boy girl boy girl boy girl.

If you have an uneven bridal party, how will you set up the party as they walk down the aisle?
I have five bridesmaids and only four groomsmen. I'm wondering if I should have two girls walk with one groomsman, or if I should have one girl walk by herself? Any advice?
