Politics, debate more than talk, but it makes me keep myself up to date with what is going on.
I'm doing an MA, and then will be doing a PhD, so TBH I get most of my stimulation from that (reading books/theoretical works; writing; discussing/debating, etc). Otherwise, I like discussing current affairs eg the latest political issues, and so on, and I like a good debate.
We like to read non-fiction books and discuss some issues that come up from them. Like I recently read a book about how they caught the spy Robert Hanssen (we sold secrets to the Russians), and we talked about that and issues related to spying/loyalty/security/how he got away with it so long/merits of polygraphs/etc,etc,etc. Same thing when we watch programs like Nova together, because it means we both have at least some background on a topic and we each bring in stuff we know separately to the conversation.
I can't discuss politics without getting too involved lol. If I pick sides on an argument, I can't just debate. I either have to let it go and pretend to agree/not respond to the person or I go in full-force, horns forward, ready to charge and I get overly passionate.
My FI and I are more emotional people so that's what we discuss a lot - psychology (he majored in hospitality and my degree is English/psychology) and how best to interact with people and what makes them tick.
If I'm not with FI, I'm doing the same thing by myself. I like articles on psychology and I read a lot of fiction books that are heavy in character development and exploration. And I love reading about notorious criminals lol.
We teach eachother about our interests. He'll teach me about high end audio equipment, photography, computers etc and I'll teach him about things that interest me. It's nice to learn not only about eachother, but about something the other one may never give a second thought to. We're both interested in astronomy and science and try to keep up with current events as well.
When we're done taking smart, we go play nintendo together....
I go play on a trivia team once a week. That seems to fill a good portion of my intellectual stimulus quotient and keps me from driving my Mr nuts! Otherwise, I read a lot of non-fiction, watch documentaries and research things I'm interested in.
He teaches me politics and I teach him about religion. We're diff religions and since our engagement I've been more involved in figuring out exactly what I believe/want to teach our kids, so a lot of times I will share with him the things I discover in this process.
We watch the news together and discuss current events every day. On the weekends we talk about our finances and how we want to save/invest our money. We also listen to each other talk about personal interests, DH is really into football and I get really into the books I read. We also 'debate' politics, but we feel 99% the same way so it's more like we get each other fired up.
I watch lots of local news and then fill him in when he gets home. I am really getting involved with local politics because through recent events I am realizing how much it affects our lives. There is a lot going on right now in our city that affects the lives of many people we know too, so it is pretty important.
I also love watching documentaries and public television (local). I tell him all about things that are interesting. I also watch cooking shows occasionally and tell him all about the best tips.
When we have the time, which is rare, we love reading out loud to one another. My absolute most favorite thing to do.

FH has an exceptional need for stimulation, and I am getting bored with many of the same topics for intellectual conversations. What do you talk about?
