Your ideas sound beautiful!
And don't worry I spent days and days on my save-the-dates and really enjoyed the process. Just keep making a draft of every idea you have and eventually you will find one you like.
I would recommend putting the text on the paper and then adding design elements around it.
Have you looked for fall imagery on iStockphoto? I think fall leaves, acorns, haystacks, could be really beautiful.
What about just some kind of swirl from istockphoto? I love one that I found and it would look wonderful printed in a brown or coppery color on the colors you've chosen.

I would use it horizontally, but you could do either.
Also, I found this wonderful clip art book on the Dover Publications website that is called Calligraphy Graphics or something close and it's basically a ton of clip art just like that swirl. Maybe one of those would work.
What don't you like about your ideas?
I designed my own invitations and have a similar theme as you, I used the copper stardream as the accent panel to mine and I wish I had gone with a brown pocketfold, but FI vetoed that and I used a natural paper looking pocketfold. here are my invites if you would like to see them:

if you'd like to use any part of this, let me know and I'd be happy to send you the files. I did them in Illustrator.
See below for a mockup I worked on last night--the three language text has been fixed for a while and I've been playing with fonts/design elements, etc.
I really like how the B&W daisies look but honestly, daisies aren't really in my scheme of things... I created the daisies from a photo and if I use them, have more cleanup to do so ignore specs you might see around them.
My theme is autumnal, so obviously I think leaves--the problem is that I'm just not feeling that the leaves I'm finding are very elegant. I really love this "botanical illustration" look but leaves are sharp and pointy... not fluffy and petaly. :)
I'm hoping to find something to put in both the lower left and upper left corners.
Click the photo for a larger version (I just blurred our names and the location in each panel--except Hebrew because it doesn't include our last names there at all).

Argh, I feel like this is such a goofy thing to complain about and it really is my fault... I'm having a hard time with my DIY invitations because I can't settle on a design I like!
I'm going for an autumn theme, making pocket folder invites--the pocketfolders themselves are square dark brown (Coffee Bean from cardsandpockets.com), copper metallic paper for the invitation mat and cream color card stock for the invitation itself and the inserts.
But the design elements?!
Anyone else have this problem? :/ I'm really getting crunched for time on this and I need to make progress but I am simply at a standstill. I don't want to settle and then really dislike my invitation either. :(
I have been trying for the past hour to get some form of it to post with this and I can't even get that together! I'm gonna keep trying but I'd love to hear your feedback on how to get out of this funk. I've tried concentrating on my theme, colors, etc... nothing seems right to me.
