We are planning our own 25th Anniversary party and sending out invitations. Our names are already on the first line saying who the party is for, so on the line that says Given By:_________________, should we put our own names or the names of our adult children (even though they aren’t really putting on the party?

Honestly is always the most polite. If you are hosting your own party, then I think you should list yourselves as host.

Do you have to say the “Given by” portion? I think that if you just have your names on it, then it is assumed that you are the ones hosting… Or just say “Person A and Person B invite you to celebrate…”
Though, now that I am rereading your post it seems like you bought pre printed invites. So everything I just said is null. I would go with yourselves.

what about “Please join us on X date to celebrate the 25th Anniversary of Kate and William”.

If you have to list the hosts, you should list yourselves. I agree with @MissCT: though, if you can, omit it!

If you and your guests aren’t particularly formal, you could fill them out as:
Given By: The Happy Couple
If the invitations are not pre-printed, it might be easier/less awkward for you to not include that line though.
