Obviously I can’t see exactly what you’re thinking, but from your description, your invites sound lovely!

For the interior, I’d suggest maybe mounting on stock and sticking with a consistent font and font color. If you start switching up fonts and colors for the text, it’s going to start to look a little messy, which is the opposite of what you’re going for.

I think if you use a z fold you will eliminate the third panel you don’t know what to do with. And I agree that you should keep the font and font color consistent. You might consider using the cut out cross design on the other panels and elements. If you have a stamp or use a clip art, you could put it in the corner of one of the inside panels and on the RSVP. Even on the envelope if you wanted.
