I like the second one for a more modern look and the first for a more rustic look. As far as alternatives, my favorite idea is to have the guest write messages and put them in jars that you and your husband will open in the future. For instance, you would have a jar for your one year anniversary, your fifth anniversary and so on and so on. Guest would then be able to give advice for those milestones.
LOVE the finger print trees too but I'm not going that route.
I bought a large wooden letter that I'm going to paint white and do it like this:
