Something small he's been wanting. My FI drinks scotch, so I'd probably buy him a small bottle of that. Or a cigar, or... guys always love homemade cookies/cakes/etc!
For the 2 years that we did long distance I would always send him random things---
A large ball with a message from www.sendaball.com, a giant fortune cookie, Cookie Bouquet, a balloon bouquet.
I think Edible Arrangements are really neat too--just pricey and delivery on those is expensive!
Cook him a huge roast dinner and watch it in front of the TV with him watching Hockey!!!!!
He appreciates that WAY more than flowers or chocolates!
I also bring him home his favourite childhood snacks or rent a movie he really wanted to see that I am not so excited about! Get dressed up in a his favourite lingerie and be waiting for him when he gets home for work!
Apparently the way into my guys heart is food and sex hahahahaha
great ideas lampshade. as for the cooking suggestions - we decided on sunday after my attempt at dinner that i'm not going to be a betty crocker wife... thankfully he was aware of it before the wedding - full disclosure and everything
I bake his favourite apple cake. Or make the chili recipe that we adapted together to suit both our tastes and that he loves.
I also write him love notes on a pretty regular basis. On little credit card sized cards. Then I hide him everywhere for him to find. On his pillow if he's going to be late from work, in his coat if he's off early in the morning, etc. Keeps it interesting :)
Usually clothes. A sweater, or new jeans, a pair of sandals, a new tie. He hates shopping and I would rather shop than anything else in the world, so I'll buy him clothes that I like and I think/hope he'll like. Then when he wears them I tell him how great he looks and he gets all shy and silly and struts around the house feeliing manly and cool. It's hilarious.
Strawberry Milk. It's his favorite. If he's had a crappy day that can make him smile. ;)
@littlemissmoo - I love the little notes. I did this for my guy before I left to study aborad when we were in college. I hid them EVERYWHERE. In pockets of his jeans, in his desk drawers. He was still finding them months after I got home :)
I buy his favorite candy when I'm out grocery shopping sometimes, especially seasonal candy. I also love to bake for us but I've had to stop that b/c we are trying to be more healthy!
tshirthell.com is amazing for an impromptu gift.
food always does the trick!
What's his hobbies? I like to play on those (for instance - Loverboy likes cars ... I get him silly little toy cars for fun).

so guys buy flowers "just because" or to do something nice. I once got flowers for someone I was dating - he didn't know what to do with them. I was told by another that chocolates were fattening. so, ladies, what do you get / do for your men "just because"?
