So I’ve been lactose intolerant for about 6 years now (so I know what i’m missing out on!) But I’ve been making copycat recipes of normal creamy, cheesy dishes that have turned out sooo good! Here’s some tips:
For Chicken Pot Pie: Instead of using cream of ___ soup or heavy cream, make a roux and then add some lactose free milk. It will thicken up perfectly, plus it’s a lot healthier (we use skim milk)!
For Baked Ziti: Rice mozzerella cheese and lactaid cottage cheese can replace the other cheeses! Soo good!
For Alfredo Sauce: I haven’t tried this yet but I figured I would make a roux and add milk for the thicker texture it needs, and then would add garlic for the flavor. Then I just found there is a vegan parmesan cheese so I’m anxious to try adding that and see how it turns out!
