I grew out of my gown by 2 sizes since buying it. I think there are a few factors:

1: the style of the gown, some are easier to size down than others

    2. finding a good seamstress

Are you buying the too big store sample and getting a discount instead of ordering the dress in your size? If so just think about how much money you will be saving by getting the too big dress versus how much money you will have to sink into alterations to make it fit you correctly. It may not be worth it.

Depends on how big it is.  I've heard the rule of thumb is that you can pretty easily adjust 2 sizes down, but then it gets challenging and costly.  Also depends on the style, cut, embellishment on the dress.  A ruched bust, for example, is very difficult and expensive to adjust even 1/2".  Taking in a relatively simple a-line in at the hips even a few inches is usually not that difficult.
