Mandalay and Maggiano's are great picks! You will get a coordinator at Mandalay to assist you with planning and items around town. The coordinator At Maggiano's can help with vendor recommendations for your reception too.
Cngrats!
I'm not a veteran bride but I am a Las Vegan! I love Mandalay Bay. It's a gorgeous casino with a ton of fun things to do. Make sure you check out Mix Lounge with your girls for a fun time and a great view!
Maggiano's is a popular spot for receptions so I'd think they're doing something right! I can tell you that FI and I go every so often for dinner and the food is DELICIOUS. In fact, we were just there this Saturday after seeing Le Reve at the Wynn right across the street. I had the Four Cheese Ravioli in pesto cream sauce... so good.
If you do decide to have the reception at Maggiano's I would highly suggest renting a limo/party bus for your guests. All of the casinos look close but Mandalay is no where near the Fashion Show Mall in reality.
ETA: Here's a picture I took from Mix last time I was there:

Okay ladies...
My fiance and I started dating in Las Vegas (We were acquaintences, that happened to go to spring break there at the same time) and would like to get married there. I have had my eye on a wedding at Mandalay Bay and a reception at Maggianos.
Did you find getting married in Las Vegas to be fairly stress free?
Did your guests enjoy the trip/experience?
We are 26 and 28 years old and like to eat, drink and be merry. I basically want great food, good drinks, in a fun location. I do not like "all eyes on me" and have never wanted a big, fancy princess wedding. I feel like this route may be best for us.
Any suggestions and/or advice would be great.
Viva Las Vegas!
