We are leaving on vacation tomorrow. There are a TON of veggies in my fridge which I’d like to try to use before they go bad (red pepper, red onion, broccoli, zucchini, kale, celery, spinach). Any suggestions on what we can make?
I could do stir-fry but we had that last night so I thought perhaps I’d mix it up. I could do a veggie bowl with quinoa, but thought I’d see if anyone else had a different idea for what they do when they have lots of leftover veggies.

@RunningGal: I like to do curries, soups or stir fry if I have a ton of veggies. You could do a veggie lasagna too.

I would do a curry – all of that except celery is great for curries (and really, you can put celery in anything).
Also, whatever you don’t use, you can freeze to make vegetable stock when you come home (or make the stock today if you don’t use the veggies for supper).

If you’re feeling ambitious I would make two soups and freeze them:
tomato based lentil soup (or stew if you don’t have broth) with onion, pepper, zucchini, celery
broccoli-cheese soup: saute onion and tarragon, add all your green veggies (spinach, kale, broccoli) add chicken broth and simmer unil tender. Blend it up – you can either cook it right away in french onion soup bowls with cheddar cheese on top or freeze it for future.

I would just freeze the greens for future use in soups/omelettes, and chop the celery for soups also. Then maybe do a pasta with roasted red pepper, broccoli and zucchini with white beans? you could put spinach in there too

I am all about freezing stuff so I would freeze them for future meals or mix a lot of that in with pasta.

Thanks! I ended up making veggie wraps and freezing the remaining veggies that I had cut up to make a soup when I return! Thanks for all the ideas 🙂
