Ok this recipe sounds weird, but I tried it and it is SO good. also, it’s easy. If you like pumpkin bread, this turns out very similar, but very moist. Bonus: it is low calorie! 70-90 calories per slice.
- 1 box angel food cake (no water)
- 1 large can of pumpkin (3 cups)
- 2 tsp cinnamon
- 1 tsp allspice
- 1/2 tsp ginger (or, add spices according to taste)
Mix all ingredients together and put in 9”x13” un-greased pan. Bake at 350 degrees for 30 minutes (or until done).
Serve with whipped cream, ice cream or…. nothing at all!

Ok seriously I may try this. Is it really that moist? Im just suprised bc there is only 1 wet ingredient.

you’d be surprised — it is super moist. more so than cake. I ate mine w/o whipped cream. whenever fruit is involved in baking, that really ups the moistness factor. (shudder, I am not fond of that word.)
BUT if something happens and it turns out dry, then the whipped cream will help. but I only think it would dry out if it was baked too long or something.
also, I haven’t tried it with frosting, but I could see this being good with cream cheese frosting– but just a bit drizzled over it. that would make it pretty rich though. just a suggestion.
