List your favorite low carb foods. I am not starting a low carb diet, per say. BUT I do want to start buying alot more low carb groceries to help out my diabetes.

So bee's what is your favorite low carb item?

I pretty much just buy unprocessed foods.  My favorite of the bunch is probably eggs.  So simple and versatile!

    My other staples:

    brocolli

    spinach

    tuna

    salmon

    chicken

    beef

    bacon

    strawberries

I would look at low GI foods more than low carb.

Do you mean low carb packaged items?  Most veggies are low carb, as are meats, eggs etc.

Low GI foods give you more flexibility because protein and fiber balance the blood sugar spike that traditionally high carb foods provide.

Quinoa is really good as is pearled barley, way better than brown rice

berries are better than many other fruits

@lefeymw: Well see the thing is I have to take one unit of insulin by injection per 10 carbs of food.

Say I eat something that has 40 carbs I will have to take a shot with 4 units of insulin in it.

    Carbs turn into sugar. :/

P.s Thanks for the yummy food tips, too! :-)

@Mrs.Estep: low gi is better for diabetics too! my MIL is diabetic and by following a low GI diet she has been able to much better regulate her blood sugar because they tend to be lower carb, but also have bloog sugar stabalizing qualities.

She is now in love with quinoa because it barely spikes her sugar at all, unlike normal breads that are "low carb"

I have gestational diabetes and have to watch my carb count. These are a few dinners that I have. Quesadilla with cheese and mushrooms with light sour cream. Salad with all the fixings including croutons and house italian dressing (I get the carbs from the croutons and dressing). Chicken with ranch and stovetop, sometimes I add bacon bits for flavor.
