Lunch Ideas….

I always pack dinner leftovers for lunch the next day, & 3-4 snacks. What that ends up looking like is (let’s take today for example):

2 roasted stuffed peppers (with beans & rice)
1 Banana
2 Peaches (OMG I LOVE THEM!!)
1 handful of cherries

I often pack a tupperware full of veggies with dip which really helps tide me over on those mid-morning hunger pangs – broccoli, zuccinis, baby carrots & peppers! Just didn’t have time this morning 🙁

I have had the worst craving for Tim Horton’s garden vegetable sandwiches. Obviously I don’t want to eat out every day so I’ve been making my own version of the sandwiches at home. I bought some sandwich buns from the grocery store and I’ve made the same sandwich every day for over a week and I’m still not sick of it!! I can’t get enough actually lol.

 

The ingredients are just lettuce, tomato, cucumber, cream cheese (sometimes I put cheddar cheese too), and a little bit of ranch sauce/dressing. It’s great because you don’t need any deli meat and you change the veggies/sauces up to suit your taste.

@RoyalLime:  Bad Mr. Lime!! LOL! I usually cook for 8-10 people every dinner I make so we always have leftovers despite both of us being big eaters. It can be problematic sometimes cause I really make (almost) TOO MUCH food.

How about cooking something specifically for YOUR lunch that is off limits to your man? I have to do that often.

Make a veggie “lasagna use sliced par cooked eggplant and zuchinni instead of noodles and a mix of ricotta and cottage cheese mixed with lots of fresh herbs, onion, garlic, spinach egg and some chicken sausage as the stuffing. Its so tasty.

Also, have you tried having savory cottage cheese (get 2% it tastes better and fat doesnt make you fat, you need the fat for satiety)? Top with diced tomato, artichoke hearts, dash of hot pepper, black pepper. Pair it with a sliced apple and some OB.  Bonus, it is veryeasy to put together!

Mexican style bean salad, white beans, kidney beans, corn, green beans, tomato, cucumber, lime, paprika, garlic, chili powder, olive oil, salt, cilantro.  Then eat as it is or toast 2 small corn tortillas and top. its a non-fried tostada. Bonus, since most of its canned, its really easy to make enough for a couple days in minutes.

@RoyalLime:  I’m 16 weeks and what I really, really want right now is to eat an entire pizza for lunch…lol 🙂 Not helpful, right? Instead, I’ve been having a soy protein shake with a piece of fresh fruit for lunch. Other days I have a low carb sandwich (just one piece of bread with microwaved meat–turkey (I saw you don’t want to eat lunch meat, my doc okayed it as long as I microwaved it separately), no cheese, a little spicy mustard and fresh veggies). On special days, I treat myself to a Lean Cuisine meal (but watch the sodium!). Also, low-sodium light Progressive soup 🙂 On days I have to indulge, I’ve been eating a single-serve container of Mac and Cheese. Oh, and I’ve included a dill pickle with just about every meal, lol 🙂

@RoyalLime:  Do you cook roasts?  This doesn’t help today, but if you buy an extra big beef, or pork roast, one that you know what’s in it, and that it’s safe, you can slice it and make sandwiches with that for a couple of days.

As for today, how about a cucumber, cream cheese sandwich on rye bread?  Is cream cheese ok – I can’t remember.  But a vegetable sandwich on interesting bread, with some cheese made from pasturised milk, is very tasty.  Maybe some fancy mustard on there.

@ThreeMeers:  I did this with veggie lasagna!! It scared DH away and I got to eat it all myself over the course of a week 😀 This is the best recipe ever OP: http://pinchofyum.com/skinny-veggie-lasagna. I’d forgotten about it, but now I’m going to make a batch this weekend! Yum!!

I used to eat salads every day, but around 6 weeks, I suddenly developed an aversion to any raw vegetable. I switched to soup with crackers or toast (or my favorite indulgence, tomato soup with a grilled cheese sandwich). I also love the bean/beef burritos Aldi sells, top them with some salsa and I’m in heaven (they are low calorie and loaded with fiber). I’m anxious to be able to stomach a salad again, I miss them!!!
