Mac 'n Cheese....

    Who doesn't love a little mac 'n cheese, right?  That is why we are serving it at our wedding.  We are going for a "comfort food with a twist" style menu which will include sliders with bleu cheese and caramelized onions, mac 'n cheese made with gruyere, and maybe mini-grilled cheeses with tomato soup. 

    However, we are having trouble coming up with additional comfort food selections, mainly a protein and a veggie.  We are having a family style dinner so the food must be fun and filling.  Any suggestions?

    Um first of all - YUM!!!!! That sounds like an AMAZING menu!!

    I can't think of anything else off the top of my head, but I will definitely be thinking about it!

    Yum! Please invite me :) I would recommend fried chicken or meatloaf for proteins. I think that roasted fall veggies would be great for a wedding...roasted butternut squash or finger potatoes.

    Yum yum yum ... I love the idea of squash - my grandfather always used to make it with scrambled eggs  - all mixed in together!

    you could do an old fashioned pot roast for meat and veg.  usually you don't even need an expensive cut of meat to make a good roast.  It's filling, tender, flavorful and easy to "keep"...just a thought :)

    P.s. love the mac n cheese and grilled cheese

    I have to say - BLEH - to mac n' cheese. Makes me wanna barf a little just by thinking about it. I haven't had any in years.

    Meatballs with some type of potato? Mashed or a type of potato pancake. We are doing a similar type of thing and one of the things I came up with was grilled shrimp (possibly bacon-wrapped) with polenta.

    @luli29 lucky you! Oh, how I wish I could resist the siren song of melted cheese on pasta. Alas, I have to order it everywhere :)

    Once I had the most AMAZING mac and cheese so I purposefully ate half to save the rest for the next day. Exactly half. I went to go eat it the next day and it was gone! Mr. Peng ate it when I wasn't looking! Then I cried. Pathetic. I had seriously been thinking about it all day. So lame :)

    I love cheese soooooo much...but I'm not a big fan of pasta. I just don't deal really well with extra gooey stuff

    @luli29 haha... there are so many foods I wish I just didn't like because there is nothing nutritionally valuable about them! I mean I guess there's calcium in the cheese but it's basically artery clogger in a bowl eh ;)

    I second pot roast.  It's my favorite thing.  As a veggier, maybe roasted broccolini?  A nicey healthy veg, but with the twist you were talking about.

    The rest of your menu is making me hungry!

    i love the idea of meatloaf or meatballs-- very comfort food-y.  As far as veggies go, i like the idea of a fall veggie-medley, with squash, zucchini, etc.  How do you guys feel about corn on the cob?  i feel like there's a lot you guys can do to dress that up a bit for a 'twist', too!

    @Penguin - that is awesome. Not that you cried, but that you were passionate enough about it to cry. I can totally relate! My fiance is reading over my shoulder and said he would cry if I did that to him.

    @bellum - your menu sounds delicious. I like the idea of fried chicken, or maybe fancy meatballs or some kind of bacon-wrapped-scallop thing. That might not match, but it sure sounds good right about now. Sorry, this is probably not helpful at all!

    YUM!  what a great idea!  I just macaroni and cheese with broccoli for dinner and it was life-changing.  I think ribs would be a yummy comfort food but maybe a little bit too messy, what about a little bit of spaghetti rolled up on a fork and stuck in a meatball?  Maybe that is too much pasta though....

    I also would vote for fried chicken!  It seems like it would mesh ok with mac n cheese.  Yumm!

     

    @pengy I agree. Sometimes I wish I didn't love cheese soooo much.  But there are kinds that aren't as bad for you!  I try to get my fill that way!

    And I definitely recommend the grilled cheese- a friend had them at a recent wedding and they were a huge hit! (truffle oil grilled cheese, mmmm)

     

    I agree with other peeps that fried chicken, or ribs sounds like good proteins! And what about grilled corn on the cob as a veggie?

    mmm....so hungry just thinking about your menu!

    What about chicken pot pie? Little mini, 2-3 bite ones? I always thought that was a great comfort food.

    I also really like sweet carrots - carrots in a sweet buttery & brown sugar sauce - that could be your veggie!

    I love the idea of mini pot pies and meatballs/meatloaf would be great too. Swedish meatballs with butter noodles are a definate favorite of mine.

    How about green bean casserole?

    What, you mean you're not doing hot dogs in the mac and cheese for protein? ;)

    My mind went straight to chicken nuggets too, but the pot roast and the mini pot pies both sound a lot better than chicken nuggets!

    yum! everything sounds delish! my only suggestion would be to make sure to have something that doesn't have dairy, since everything you listed so far does. if you're guests are anything like mine, there's probably some lactose free people in there.

    My FI was reading this over my shoulder and his First reaction was "fried chicken and mashed potatoes!" or, if you're vegetarians like us, "vegan chicken fried steak with mashed potatoes!" which then made him demand that we go to our favorite vegetarian home comfort food restaurant tonight for dinner! Hehe.

    I'd say I have to agree with him, but also with some other posters. I liked the idea of grilled veggies or squash. Plus, nothing says home so much like mashed potatoes. Meatloaf is great too. I really want a menu like this! It sounds delicious!

    What a fun menu!  Fried chicken, pot roast or meatloaf would be a great protein addition.
