Coming off the keto diet so I’m having to eat tonnes of fruits and veggies and salads and protein to sort my body out again. Made a fantastic salad today, really quick and easy and nutritious as well!
Get a bowlful of your favourite salad. Get a TINY bit of mayo, spread it all over so that it JUST coats the majority of the leaves in the bowl. Get some jalopenos, chuck them in (in SMALL quantities, unless you really like your jalopenos!). Sprinkle some low fat cheese over, about a 1/3 of a cup should do the trick. Cook a low-fat sausage (I use venison sausages – low cal, low fat, high protein AND a great potassium source! Plus they’re quite cheap too), and two rashers of bacon (GRILLED). Cut them up into small-ish pieces. Spread them around the salad so that they are evenly distributed. Et voila! Under 300 cals, and fairly quick and filling too I finished off with a banana and a bowl of berries to get the vitamins and carbs in here as well. This is something you can cook in bulk and keep for the rest of the week as well.
