My aunt has a margaritaville machine. Is that what you're talking about? Or are you thinking of an industrial one? I wouldn't say the margaritaville machine is messy, but if you were making a lot, you would have to keep adding the ingredients and it could get sticky. I wouldn't want to have to make one while I was all dressed up.
Jacqui- I've modified my post and added a picture. It's not one of those small machines that we'll have to keep messing with. I guess it's one of the commercial ones.
If they contain any alcohol, then you will be required by most venues/states due to liability issues to have a bartender on hand to man them. That said, I have not heard anything about how messy they are. But it doesn't hurt anything to have a wet towel, that any bartender will have, on hand to clean up any stickiness. The industrial rentals say their mixes serve about 50 people one serving.

I've never really been to a party that had a margarita machine. We're having one at the wedding. I was told by the venue coordinator that I need to have someone in charge of the machine since they can get pretty messy. Does anyone have any input on this? How messy does it or can it get??
Here's a picture of what the machine looks like, I guess it's an industrial kind. Each container makes 3 Gallons..
