We are having family and friends help with the food but will be making extra just in case sort of thing.   Any we have left will be spilt up I’m guessing.

I strongly advise you to get on the phone (not email or text) and speak to the people who haven’t replied, to get a firm “yes” or “no” out of them. There are always some who are too lazy or disorganised to reply, as well as a few normally polite people who just genuinely forget to reply.

For a buffet, extra is always good . People tend to take 2-3x more than a reg serving size

We gave a little above and got the left overs all sealed up in containers for us for the bbq the next day.

I was actually expecting more to be left over but it was plenty – mainly salads and we had planned for all the food for the bbq anyway so the leftovers were extras.
