Pork usually isn’t considered to be as classy as Salmon.  Especially a Salmon served planked.

And then you have the possible issue of those who won’t eat pork for religious or health issues.

Which makes Salmon a safer bet.

If you still want to go ahead with Pork… you could always GOOGLE – Asian Pork Dishes – for ideas.

Sweet & Sour Pork… or Teriyaki popped into my head first.

Hope this helps (somewhat),

Who gets upset about salmon? Don’t people normally love salmon?

Hm, I don’t eat the most pork. A citrus asian-inspired tenderloin? Stuffed porkchops?  Char siu?

If you like the salmon, stick with it. People can always pick chicken!

I don’t know if this is helpful but we’re having an herb pork loin with a balsamic blackberry reduction sauce and roasted apples. I guess that’s more Fall-like than Asian inspired but maybe an Asian braised pork shoulder or loin? Made with chili paste, soy sauce, sesame oil and brown sugar?

I would not eat salmon. I would choose pork.

@kittywolf13:  Maybe you could see if the caterer can do a riff on a Cuban sandwich…so pork cutlet “Cuban Style” with ham and cheese layered on top — that sounds tasty to me!
