Sounds great to me, but I was planning to slip herbs into all my bouquets too- rosemarry, basil, and mint. Not only do they look great, but they smell wonderful and, as you pointed out, can be eaten in a [hungry/upset stomach] pinch!
I think it sounds like a great idea as well. I love non-traditional plants in bouquets, especially herbs and fruits.
We had mint in my bridesmaids bouquets as well as mine. I loved it!!! We also had rosemary and fiddleheads. They smelled so fresh I absolutely adored our flowers!
Go for it! Herbs are a great way to add texture and a great scent too! :)

Wanted to get this out before I passed out from the allergy meds-
Has anyone ever seen mint in bouquets?
I saw a floral arrangement from a farmer’s market with it and thought it gave a nice texture. I am using primarily hygrangea so the mint would contrast with the softness. I love the smell and in my ever practical mind I reasoned if any of the girls (or I) get an upset stomach we can just chew on a leaf. (FH responded to that idea with “...yes, because nobody would notice a bridesmaid eating her bouquet.”
