    Hey bees! Last night I was at a loss for what to make for dinner- I looked in the cupboards and the freezer and my options were slim. I had canned diced tomotoes, a whole chicken, and lentils. Other than that- nada. I was determined to make my honey a yummy dinner though.

    Epicurious.com to the rescue.. I literally typed in "whole chicken" and "diced tomatoes with lentils" and here's what I found:

    The chicken recipe looked weird to me- not using any butter or oil on the skin during cooking, but I went with it. OMG, ladies- this was the best roast chicken I have ever had!!!!!!! I actualy didnt use anything on it once it came out of the oven, it was so juicy and tender- I cooked it for 50 min.

    The lentil salad was delish too! My canned tomatoes had a lot of liquid so I could have used half the dressing. I didnt have basil, so I used dill only and it tasted so yummy.

    The best thing yet? Hubby loved it!!! This one is a keeper... I just had to share it with you all!!

    Ah!  That's so funny because I basically only have chicken in the fridge.  And some frozen veggies.  I'm gonna try the roast chicken recipe, thanks!

    @Jennifer- go for it! It was so delish!! I used sea salt on the top, it was a bit salty but my hubby loved it!

    @Chocolate- I love that site too- its my guilty pleasure! The "breakfast risotto" I found is a staple in our house- we have it at least once every 10 days!
