You can't cut down the number of guests if you've already invited them! Why did you invite so many if you didn't want a big wedding?
Inexpensive foods you could serve... pasta and bbq style sides are cheap. But I think it sounds like you're already serving a decent menu. Why do you need to add more to it?
How many did you originally invite? If someone rsvps for additional people who were not invited, you need to get on the phone with them immediately to let them know you won't be able to accommodate the extra uninvited people. People never rsvp for anything in a timely fashion unfortunately and always wait till the last minute, if at all, expecting you to be a mindreader as to their intentions. Once the invites are mailed, you quit inviting people.
The cost of food for everyone, as well as other expenses, is something that should have been looked into long before you sent out invites and adjusted your guestlist based on what you could afford. If a full meal is non-negotiable, look into pizza and/or pasta from a favorite pizza parlor or else call up your favorite local ethnic restaurant.
Hmmm it's not like you can un-invite people. Is there other ways you can cut your budget? That's what I'd look at. Say -if you were planning on doing lots of flowers, look at doing candles or a DIY centerpiece? Skipping favors? Having a signature drink, or two, instead of an open bar? Change from a band to a dj. It all depends on what contracts you have put a deposit on or what contracts you have already signed. I guess more information about what's going on with your venue. Best Wishes!
I'm afraid you're stuck...however I don't think you need to change your menu just add more servings...

@gcwest- Pasta is a great idea! I will most definitely look into that! Also, my invited guests aren't the problem... it's THEIR guests that are the problem.....
@Ember78- I will most definitely be getting on the phone to let my invitees know that I can not accommodate THEIR invitees! Yes, the cost of food for everyone was budgeted well in advance; however, the cost of food for an additional 50-75 people was not!
@rlsulli1598- Thanks for the thoughts! I have most definitely already begun to cut back in other areas!
@bridegrl- Yes, I will definitely add more servings, and I think I like the pasta idea as well!

Hello, Bees! Please allow me to vent for a second!
Back in December, I asked my FI several times during the month to give me his invite list. Of course, he didn't and I had to go to his family/church to get a list! Well, the invites went out 2 weeks ago, and everyday since I mailed the invites, he has 3 to 4 additional people to add to the invite list!
My RSVP deadline is this coming Friday, April 16 and the wedding is May 15. Since the majority of our guests live in the same place we are getting married, Panama City, Florida, I figured that they would definitely RSVP immediately! Unfortunately, I was wrong- oh, so wrong!
Yesterday, prior to opening the mail, I had 50 RSVPs. After opening the mail, I had 63. However, this morning, with my FI's co-workers, I'm now up to 105 and still counting! This is beginning to be unbelieveable!
We had our food tasting last weekend and decided to go with two different styles of chicken breast as the main meat for 150 people! In addition to the chicken, we are doing a wild rice pilaf, southern-style green beans, a salad and a dinner roll!
Apparently, when this is all over, we are going to have 200 plus guests......
Does anyone have suggestions on how I can cut down on the number of guests (which is very unlikely) OR what additional inexpensive foods I can feed 200 plus guests?
