Why can’t you tell the florist to NOT put rhinestones and what not in your boquet?  And I’d go ahead and tell her not to take orders/advice on your flower order from anyone but you.  Might want to reiterate that with your other vendors just incase your mom goes behind your back again.

And I’m sorry you’re having to deal with this, it sucks 🙁

While I am frustrated for you that your mother doesn’t listen to you…don’t give her the florist’s contact! Haha. 

OR you speak to the florist (and any other vendor she has spoken with) yourself and let them know in no uncertain terms that, only yourself or your fiance is authorized to discuss any changes, additions or otherwise about your wedding flowers.

I would probably just call the florist and tell him, under no circumstances, is he to listen to what your mother wants. I don’t care if she’s paying, she is IGNORING you. I understand some input, but this goes way beyond that.

Honestly, if you’re old enough to be married you are old enough to be viewed as a woman in your mothers eyes. She is treating you like a child whom she can still manipulate. Paying or not, this is your wedding and it’s up to you to make sure she knows under no uncertain terms will you be bullied to accept her ‘vision’ of what your wedding should look like.
