I am thinking of using a single orchid submerged in water, but I love the idea of flowers coming out from the top

@Mrs Scott to be: Have you checked into wholesale? Or maybe using real touch or just fake flowers of some sort? Maybe that could be cheaper...
I'm pretty useless on flower advice. I'm not having any.
Have you considered DIY? I made mine and I think they turned out pretty good. I would honestly be totally open to long distance helping you! here are the ones I made for my wedding.

Yep. I bought everything wholesale (vases, flower holders, floral foam) I'm ordering the flowers from Sam's club. I got quotes from $3500-$4500 for 20 centerpieces. I'm making them for about $1,000.
Have you thought of using a white flowering shrub that is local to your area but would give the same look?
I would check with a garden center.
@Mrs Scott to be: I would definitely check in to wholesale or silk flowers. I LOVE Gardenias, but they were over $6 per bloom, and that was wholesale cost! I got all the gardenias I needed for centerpieces and boquets for what it would have cost for about three or four blooms. The flowers were very realistic, too. We checked at Michael's, but their blooms were not nearly as realistic looking, (we ended up buying them at the same wholesaler that we looked at the real gardenias at).
I second the idea of submerged orchids, or a submerged centerpiece with a similar flower. You can still usually get a tall vase but you need far fewer flowers and the water magnifies them! It could be a good option if you're set on orchids.
Sometimes it is the type of orchid which gets expensive, and I'd also talk to my florist about using in season flowers which are always much cheaper!
We wanted low centerpieces for our dinner reception (which needed low ones for conversation across long tables) so we did small centerpieces of hydrangea, gerbera daisies, and they looked amazing! We coupled them on the tables with submurged orchids in the vase with floating candles on top, and scattered seashells and tealight candles and other candles of varying heights!
I saved the large arrangements for other areas of the room.
I don't know what your actual budget is so it's hard to price things out - i'd used thai orchids instead of hawaiian and then I'd add italian ruscus as a filler w/maybe some galax leaves at the base. this would cut your costs considerably and you'd stillg et hte height and overall look. You could also add curly will to the centers to get height.
I would not recommend using hybrid white delph - it shatters quite a bit and I think might end up costing more.
Another idea would be to use artifical orchids in the submerged part - there are some great look alikes and your guests might be easily tricked ;)
I saw a lovely centerpiece by the way last week. Was Dogwood blossoms on long branches! That might work. Also dendrobium orchids are less expensive too.
@bellenga: that's gorgeous but don't you think that cherry blossoms are going to be more than dendros? btw -there was a beautiful story about cherry blossoms on npr this week in regards to the symbolism in japanese culture...check it out :)
I heard that SFchick! Why I was so impressed at seeing that centerpiece (at my local sushi restaurant around the corner and I'm sure was a nod to Japan).
Not sure. If it were me, I'd go out in my yard this weekend and clip some of them off if my wedding was now!
Just me though. I just know they are something found all over the place here in ATL.
I clip my own hydrangeas from the yard all the time when they're blooming and have clipped the cherry blossoms too .
I do know that dendros are imho, a reasonably priced orchid and my florist got a great price on them!
@Almy_al: Your centerpiece is just gorgeous. Can you tell me how tall your vase is and what kind of flowers and greens are in your arrangement? What is anchoring all your flowers atop the vase and how do you prevent it from toppling all over. Do you have a picture of the foam piece on top of the vase w/out the flowers? Thanks

I got word from a florist today and the centerpiece that I really wanted is way out of my budget. Orchids are expensive!!!!:( sigh
