We are using The Bake Shoppe in Nashville, which is a division of A Catered Affair. I met with Judi and she is insanely nice and down-to-earth. Their website is: http://thebakeshoppe.com/. We're getting a designer cake with 4 tiers and it'll be about $500, but there are less expensive ones... and also much more expensive ones... just depends what you want!
I would recommend Kellie at The Bake Shoppe as well. Her work is superb and she is great to work with-very professional. You might also check with Darlene of Darlene's Kakes-I believe she is on 5th? or some numbered street like that. I haven't personally used her for a wedding cake but personally she is a hoot-boistorous thoughtful lady.
I haven't used them personally, but Dulce Desserts over in Edgehill Village on Music Row has gotten great reviews.
I've heard great things about Juanita at Dulce- my girlfriend is using her. We're getting our cake at Publix. And no- we're not really having a shoestring wedding. They make great cakes that are simple and classic. I can't see spending over $200 on a cake, when we could put that money to better use. Check out Maples too- his cakes are gorgeous!
I just had a horrible experience at Dulce, but haven't had the time to leave an online review. There is no way I would ever recommend her cakes no matter how good 1 out of 3 taste.
There is a private baker, Hannah, who I plan on using. She has made four flawless cakes for me in the past. She does that all organic cake thing and they are dense and delicious. I don't have any pictures on my computer, but I'm happy to pass along her number. She's also much cheaper than everyone else and the cakes are filling.

We wound up going with The Bake Shoppe. They have been incredible to work with, open to design suggestions and most importantly, taste wonderful! In addition to the cake, we are doing their cake truffles as a little extra something for our guests, to be served with a dessert wine. These truffles are amazing!!!
We are going to order a small cake from Publix, actually. I've never heard anything but great things about them, and our catering includes a dessert bar. We just want something to technically "cut the cake" with. We're going to have them replicate the cake that my mom and dad had when they renewed their vows a few year ago :)
We're still doing publix- I have a $20 coupon too! Let me know if you'd like it and I can email it to you. I got to meet Juanita from Dulce last weekend and her cakes were amazing! We just can't see spending more $ if we can get a good cake at Publix.
