My fiance is Jewish and I am a non-practicing Catholic. We would like to ideally have both traditions incorporated in our ceremony. I am not sure if a priest and rabbi can perform the ceremony together, especially since its on a Saturday. It will take place at a non-religions site. Has anyone had a ceremony like this? How do you begin to find someone(s) ?

Hi Strawaq7. You can find priests & rabbis who will co-officiate, but it gets tricky. It will be easier if your fiance is a reform Jew–conservative Jews are not quite as likely to co-officiate.
That being said, I met with my fiance’s reform rabbi last week and he made it clear that while he is glad I’m becoming part of their congregation, there’s no way he’ll perform our wedding. (Which was disappointing, but we did know that going in. I was just bummed with how the whole meeting turned out.)
In any event, to search for a Saturday night co-officiating rabbi, I’d recommend checking out http://www.interfaithfamily.com. It’s been really helpful for me as I try to figure out how I want to blend out two traditions. The section on planing interfaith weddings is here:

I am working on the very same thing! We are lucky. My fiance’s family is very active in their Reconstructionist Jewish congregation. Their Rabbi is going to co-officiate with a priest… and I was lucky on the Catholic front because my Godmother’s cousin is an Oblate Priest who is very understanding and open minded. I am nervous about the Pre-Cana marriage prep part of things, and balancing expectations from each officiant and each side of the family. But definitely do your homework and you’ll find a priest and a rabbi. We had to be flexible with our date, and we’ll be traveling a bit to meet with them. But it will be worth it in the end.
