Need Awesome Campfire Recipes – Help!

Aluminum foil bakes.  Chop up veggies (onions, peppers, etc…) and add stew meat or chunks of chicken or fish and a tablespoon of butter or olive oil.  I also shake on some garlic powder.  Wrap up in aluminum foil packet and cook on the coals until done.  USe individual packets for each serving so each person can pick and choose veggies and spices.  Salt and pepper then eat.

A friend of mine does quesadillas on the grill.  She covers the grill with aluminum foil first.  Then she sprays it with non-stick spray.  She then assembles the quesadilla on top (she pre-cooked the meat and sauteed veggies at home and brought them in individual tupperwares) and cooks it on both sides until the cheese is melted and the tortilla is a bit crispy.  So easy and so good!

Take oranges and cut a hole across the top, then scoop out as much of the orange as you can with a spoon. Then, put corn muffin mix inside them and nestle them in the coals of your campfire. The muffins will cook in the orange peel shells and tastle a little citrusy- they are amazing and super easy!

This is really a dessert, not a meal, but it’s delicious.

Take a banana and cut a deep V down the length of it. Remove the V (and eat it, if you want). Stuff the empty space with chocolate chips and mini marshmallows. Wrap the whole thing in aluminium foil and set it on the coals like youi would with a baked potato and let it bake for 10 min. Open it up and eat it with a spoon.

Also, I love the quesedilla suggestion from beachbride.

Kabobs with disposable bamboo skewers.  Skewer chunks of marinated beef, pork, chicken, and/or jumbo shrimp, large mushroom caps, onions, green, red and yellow peppers, etc.  Cook in a grill cage or directly on the grill.  Also, you can wrap the chunks of steak with bacon.
