As someone from the Midwest, I would love to come to your wedding and eat "Southern Fare". I think a wedding is the perfect time to show off your local cuisine. I don't eat red meat myself, but everything else sounded wonderful!

i think fried chicken, cornbread (i LOVE cornbread), sweet potato fries, BBQ... all sound grrreat. and a vegan gumbo would be nice addition too!
A rice dish would be a great vegan, non wheat option. A veggie jumbalya or a vegetable rissotto.
I went to taste a caterer yesterday and the couple went all out on the southern food. Some of the items were a mashed potato bar, you could add cheese, bacon bits, sour cream or chives, bbq, baked beans, chicken tenders, and kelbasa sausage. These might just be a few ideas you can incorporate in.
I would say since a lot of your guests will be from out of state, go with the southern theme to the food. I am getting married in Memphis, but most of our guests are from the South so we are doing an Asian theme to spice things up a bit. I always hate the standard wedding food that I am used to.

We are having an early dinner on Vday in TX. Our budget isn't huge, so we will most likely have chicken with some vegan options (don't want them to just have to eat the sides...). I am wheat free, so no pasta or sandwhiches. I am from TX/Ark, and my FI is from NOLA. The caterer is looking for some guidance, but I am lost...I'm just happy to have someone that can deal with my gluten intolerance!
With a night wedding, would you still enjoy "Southern Fare". (Most guests aren't from TX...many from midwest.) Like, sweet potato fries, corn bread, BBQ, vegan gumbo? appetizers? Or, what about a turkey carving station....<lost>
