You could use the sky as it appeared on the days they were born, graduated, met, became engaged, married. You could include a picture  of them at that time.

If you need to stretch it further you could use the dates that their parents were born, met married.

You could project quotes about love, stars skies etc.

“Last night I matched each star with a reason for loving you. I was doing great until I ran out of stars.”

“We were written in the stars, my love, all that separated us, was time, the time it took to read the map which was placed within our hearts, to find our way back to one another.”

“Most people want to be the sun that brightens up your life, but I’d rather be the moon that shines down on you in your darkest hours.”

You could display fireworks at the end of the ceremony.

@BooBooBee:  I would not have wording that identifies the significance of each night sky, but only because it is to be seen during the ceremony. It might be a bit distracting.

If the reception is in the same place, you could replay it and have the MC announce the significance.

@BooBooBee:  Is there a place or event that is particularly significant to the both of you?  I mean you can literally project anything, so you could recreate any environment that you want to be in (video game, movie scene, etc).

@BooBooBee:  LOL I’ll be honest, if I were you I’d have a hard time not getting married with the Starship Enterprise as a backdrop.  My husband and I met playing WoW and he had to keep me from making it look like Azeroth at our wedding, so I know where your FI is coming from 😉
