I didn’t do much negotiating originally but I was able to some after the fact.  We signed the contract – but we still hadn’t selected the menu items. When I selected the menu items I pretty much didn’t say anything about the main courses – but for the appetizers I said I wanted to pay $xxx per person and wanted 3 choices (passed) – otherwise I was only doing 2.  And it worked  – she gave me 25% off the appetizer selections and I was able to make it work with the price I wanted ($10 a person).  If you wanted to be more aggressive you could ask them to design a main course for a set price also.

I’m not a real agressive person really – and this was a good approach for me.  If everything is not set in stone – set some sort of target and phrase it like your asking for help. I felt more comfortable doing this with a more discretionary item than the main course – because they knew they had me over a barrel there.   Stuff will come up that you’ll want from them – but not have to have.  That’s the time to work it (but do this in advance –  I still have 6 months to the wedding.)
