Welcome to Weddingbee!  Looks like you already have some great centerpiece inspiration and your colors will be beautiful. 

How many tables will you be having?  Have you considered alternating high and low centerpieces?

You could definately do centerpieces for less than $250 a piece.  You should contact some florists and see what ideas they can offer you once you’ve set your date and location.

A good way to keep costs managed is to use less cut stems and more greenery.  Also, non-floral arrangements can save you money as well.

What about doing some tall vases with curly willow or some other kind of branches and draping red, gold, ivory beading on them or adding touches of color with flowers?

Also, utilizing the classifieds on here and other websites is a good way to obtain decor for less.

In that case… using the sticks is a good way to save money.  You can actually skip the vase on those too (vase purchase and/or rentals add up quick).  Either by using bigger sticks (first photo) or by using a big bunch of thin ones and tying them toghether with a ribbon or something so they will stand up on their own (like the second one, but with sticks and not wheat).  And then you can docorate them how you wish.

Congrats!!! I am from Memphis and am getting married 30 days from tomorrow (EEEEEKKKKK!!!) I may be willing to rent glassware etc depending on the date of your wedding. I have tons of glassware…. Also the first few pictures you posted are really easily replicated. All you need is red gatorade, water and a floating candle. I think that for 40 tables the budget is a bit ambitious especially because taller vases can be bought for about $20 each with a coupon. If you decide to do lower centerpieces with highers you could get to the cost you are looking for.
