@jpruz: Have you tried looking into Harborside Creative Catering in Jersey City, NJ? The indoor area is large and it has a sunken area in the middle where you could possibly place the dance floor, I'm not sure if that helps? That place is so versatile, the coordinator can give you several scenarios. And I'm pretty sure you can use both indoor and outdoor to your liking.
It also has the view of the Hudson River outside overlooking NYC. Its really pretty at night. Maybe your guests will appreciate catching up outside while enjoying the view. Here's a link to their photo gallery:

@jpruz:I am not sure how far this is from you but I was looking at Mercer County Community Collge. They have a unique venue. They can only do a wine/beer bar and do not have an onsite wedding ceremony so that is the reason I didnot book them. Email me if you want more info.

I am looking for a venue with a unique space set up. I'd like to have the dance floor sort of separate from the dining area. I feel like when the dining area has a dance floor, its often very loud and the non-dancers don't get a chance to chat. I went to an outdoor wedding in South Jersey where it was nicely done and we spent the entire evening catching up with friends we hadnt seen in awhile.
Ideally, looking for a fall wedding next year, approx 180-200 people. Northern NJ or Hudson Valley (near woodbury commons). I cant seem to find what I'm looking for :( I'd like something relatively simple, not looking for a lot of flare -- very clean look.
Any suggestions?
