Getting marrried in a church, with reception on a yacht, it’s formal/semiformal. Meaning men will be wearing jackets but I expect them to take them off and dance, you know what I mean? Getting married in a few weeks and it’s time to set the menu with the yacht people and I have NO IDEA what I want on the buffet. I’m having passed hors d’oeuvres and a cheese, bread and fruit platter during cocktail hour, then when guests come down to the dining room there will be a plated salad waiting for them. I have no theme right now for food, the only thing I know is I want mac n cheese on my buffet! Any suggestions will be welcome. I get to pick
-pasta (must be vegetarian as I have veg friends, no vegans that I know of)
-potato (i’m thinking of roasted red potatoes)
-mac n cheese 🙂 hooray!
So if you have any experienece with any dish or dishes that hold up well in a buffet….I’m all ears! I love buffets and so does my family, so please, give me advice about buffets…no anti-buffet rhetoric….pretty please? I need your smarts!

@fingerscrossed: My mother was a wedding photograher for a long time and always said that you can never have good pasta at a wedding. If you do a chicken or any meat it is best to make sure it has a good sauce to keep it moist. That is the only advice I have but it comes from a professional 🙂

@fingerscrossed: Did the yacht company have a menu to choose from or are they letting you just pick anything you what? If so, you are lucky and it’s time to get creative. Seafood would be fun and goes with the boating theme. Like Lobster Mac and Cheese, coconut shrimp, crab cakes, seafood chowder shooters, etc

I am having a buffet. We went in for a tasting and had some FANTASTIC chickens smothered in sauce. But, in the end, are going with something very simple, a chicken with a slice of tomato and advocado and mozzarella cheese. This way, if someone is very picky, they can just remove all the toppings and have chicken. For the beef, right now we have a skewer, but I am likely going to changte this to something heavier with a sauce. Also, we are doing a simple roasted potato, but it was SOO delicious at the tasting. Then, just a mixed vegetable because its easy and simple. Our salad will also be plated already.
We aren’t doing a fish, but I feel like salmon is already a good fish to have. It’s not too “fishy” but holds up well in a buffet.

I would try to maybe have something that is sort of themed with being on a yacht. Maybe some Mediterranean dishes?

@engleman10513: we have to go with the categories provided. I asked for a menu but no dice so far. Unfortunately no lobster in the nac n cheese because of my dear veg friends
