@Katnisseverdeen: I love soup, but I’m not really wiling to give up on summer and make the heavy meat soups I do for winter. So here’s a little lighter version – minty pea soup!
Melt 1 tbs butter in a small pot, add two finely shopped green onions and fry until soft. Add 1 cup of frozen green peas, 1.25 cups water, one cub of vegetable stock and 1.5 tbsp chopped mint. Bring to a boil and then let the mixture simmer for 15 min. Add 1.25 cup milk, salt and pepper. Use a hand blender to mix the soup until smooth. Serve with apple crumble – fry small pieces of apple in butter together with finely chopped red onion, season with honey, lemon, salt and pepper.

Not technically a “soup” buttttttt…
White Chicken Chilli (double reciepe)
4 chicken breast, cooked & shredded
2 Jars White Northern Beans (rinsed & drained)
2 16 oz jars of salsa (jarred salsa works best)
2 tsp cumin
2 tsp chilli powder
4 cups chicken broth
2 cups shredded monterey jack cheese
2 cups shredded cheddar cheese ( i buy one 4 cup bag of shred, ched/monyerey jack cheese)
Combine all ingredients in a large pot, stir frequently to keep from catching. Serve when warm. Sprinkle with some extra cheese & a dollop of sour cream =)
We ALWAYS eat ours with tortilla chips for dipping!

This one is on the heartier side, but it is — hands down — one of the best soups I’ve ever made/tasted. You would never know by tasting it that it is a Cooking Light creation!
