Number of Staff Needed for a Buffet???

@JaneDomani: Will all food be set out at once? Or will they be cooking fresh batches of food throughout the night?

Are you having action/carving stations? Any passed hors d’oeuvres?

I was talking to a party planner about the number of people to man a buffet for my wedding (about 120 people) and I was amazed by the number as well. She said 6 and we don’t have a bar.

I know that if it’s being cooked on the premises there is sometimes a large staff because they cook, serve, and clean up as they go along.

But with the way mine is set up you’d have to have 3 people hovering behind each table starring the guests down to make use of 6 people.

Maybe somebody else can give some clarity because I was confused by the same thing.

@JaneDomani: How many side options? Just one buffet line or two? How many bar set ups?

Are you setting up the catering tables or is the caterer?

That seems reasonable—I think we had ten people at our wedding, including a cook, for 90-something people. You need a lot more staff than you think to keep everything running smoothly.

We are having 2 servers for our buffet with 150 guests (the food is not being cooked on site) and we are also doing a buffet for appetizers. Since we are hiring them seperately, it was reccomended we have 2 bartenders. 8 seems like a lot!

My caterer suggested 4 for my 100 person wedding. That includes bartender. So we cut one out. 2 Servers and 1 bartender I think will be fine. 8 seems like so many. They may just be trying to take advantage.

@JaneDomani: Maybe she wants her people to serve each item at the buffet (i.e. someone mans the fish, someone else the chicken, next person the asparagus, and so on) to keep things moving smoothly and quickly.

@JaneDomani: The wedding buffets I have been to always have the caterer’s people serving the food. That is probably what is going on here.

I work for a catering company and I usually have one staff person for every 25 people at a minimum. However you want at least one bartender at each bar, 2 waiters at each buffet/station, and enough waiters on the floor to help clear dirty plates and glasses from your guests.
