My boyfriend and I are going to the park on Sunday morning to watch my cousin who will be running the ING half marathon, but I want to pack us a breakfast picnic. I think our regular eggs and toast would get cold and gross. So what kind of breakfast food would be good to take on a picnic?

Maybe something like this?
I really want to make it with fake bacon in place of the real bacon… it looks delicious!

What about doing breakfast sandwiches. Just make sure you wrap them REALLY tight so they keep warm?
Cut up some fruit and put in tupperware. Croissants fresh from a bakery with coffee in a thermos or to go cups? OH YUM!

Yeah, I was thinking fruit, OJ or coffee in a thermos. Fresh baked goodies would work too .

I’m not sure where you live but if you bring an ice pack you can bring Fruit salad, yogurt, crepes.

Trailmix, fruit salad (or just fruit), fresh croissants or muffins and some honey butter…you could make a casserole with eggs, potatoes, veggies, etc, and bring that along (they make these cool insulated casserole carriers–they are genius and keep your food warm!)

Maybe you make scrambled eggs with lots of veggies and cheese in them, then bring soft tortillas to wrap them in. I have whole wheat tortillas in my fridge and I make sooooo much stuff with them.
Fruit and yogurt parfait is good too. I really don’t ever eat a lot in the morning. I usually stick with toast and fruit (which I literally just finished).
Have fun at the marathon!

How about fresh baked muffins? Or straight up bagels?
I like the idea of breakfast sandwiches. 🙂
Fake bacon? *shocked* Take that back! 😛

@Gerbera – bah ha ha, never! You know there’s vegetarian crab meat, too? When I gave up meat we just had veggie burgers and those chicken nuggets. Now it’s amazing what they have!

How about breakfast pizza? With ham, spinach, cheese, etc? That sounds like something you can make the night before and eat cold.
@lilyfaith,Fake crabmeat? You hurt me. 🙁 Haha. Actually a friend served tofu bacon at a party once and it was pretty good.Do you like Thai food? There’s a Thai restaurant near me that makes great fried tofu dishes. So delish!!
And oh have you tried Ma Pao Tofu before? It’s a chinese dish that you can buy prepackage sauce for and you make it with soft beancurd tofu. I lurve it.

@lilyfaith and @gerbera You crack me up! I’m in gerbera’s camp with shock towards fake bacon! I’m such a bacon fan…and have even been featured on a bacon blog. *basks in my fifteen minutes of fame* 😀
I really like the casserole ideas (cause then I can make it the night before and we can get going pretty early. But then I thought about quiche!!! Quiche is good hot or cold. So I think I’ll try my hand at that. I’m on Lent and I gave up sweets, caffeine, and alcohol. But I break on Saturday’s for a beer after I go climb. But I’m thinking I’ll hold out this week and break on Sunday so that I can bring mimosas! That sounds super yummy. And maybe some muffins too! Hmmm.
Thanks so much for the great ideas. Anyone know of a good quiche recipe?

@Gerbera, I LOVE Ma Po Tofu!!! Everyone looked at me weird when I ordered it in a restaurance once. Oh yummy. I like ground beef and onions in it.
Oh my mom makes good quiche. But it’s not good cold. It has no crust (i hate pie crust!), eggs, cheese (like 4 cups…yikes), onion cream cheese (weird i know), sour cream, diced bacon, and spinach. It’s quite good….warm….with ketchup….mmmmmmm =]

We & close friends of ours have a serious -serious- pork problem. For some reason whenever we get together we always cook pork. I don’t know how many times we’ve said we need to make something else….but we always go back to pork.
Lilyfaith, sorry if my talk of pork grosses you out! 😛
If you want to make your own there’s a decent brand of pre-packages ma po sauce that you can usually find at a local Asian mart or in the international aisle of your big supermarket.
I think it’s A Do Tofu or something. I’ll check the next time I’m at the Asian Mart!

croissants, fruit (cantelope, pineapple, strawberries) butter and jam, bagels w/cream cheese, lox, tomato, coffee and oj would make a perfect-o breakfast for me!
