As one of my dad’s Fathers Day gifts I’m going to make him a carrot cake (his absolute fav!). I got a recipe from my co-worker but all of her baked goods taste terrible so I’d rather not chance it.

Seriously! Duncan Hines Decadents! Someone recommended it to me, AMAZING!! People kept coming up to me asking for my “AWESOME recipe” or saying “it was the best Carrot Cake they’ve ever had!” I always stick my cakes in the freezer too, and I really think that helped in locking in all that moisture! – And this is coming from a lover of baking and everything homemade from scratch!

I was never a big carrot cake person, but made one as a neccessary evil (too many carrots on hand). Now, it’s all my grandmother ever requests I bring to family gatherings–she’s even given up on her own recipe.
I up the spices a bit, add an extra cup of carrot if I have it, and sub out the oil for applesauce (Makes it super moist and adds great flavor).
Easy peasy and absolutely delicious.

I ended up going with @CupCakeMeg‘s suggestion and getting some Duncan Hines. It. Was. FABULOUS! Unfortunately, both of my parents came down with the flu yesterday so I didn’t get to see my Dad to give it to him. It’s a 30 minute drive so I sent him a picture of us eating it with a promise to drop off a fresh carrot cake on Friday.
