FI and I love having a really yummy meal on Sundays before we get back to a week of work and healthy meals.
Tonight is homemade meatloaf, mashed red potatoes, and green beans. And a bottle of Riesling!

cls9q: A salad with mixed greens- kale, cabbage, brussel sprouts, and chicory with dried cranberries, pumpkin seeds and poppyseed dressing with chicken breast on top.
…and a bottle of pinot gris
dessert is strawberry cobbler.

Roasted chicken, pasta salad, potato salad and a garden salad!
Wish I had some cheesecake to wash it down with. Lol!

We always do our food cheat day on the weekend, usually Sat or Sunday, sometimes both hehe. But tonight FI is out of town on business so I am having a BBQ chicken salad with ice cream and blonde white chocolate homemade brownies for dessert. Having a day off of healthy eating makes eating healthy the rest of the week so much easier for us..its like something to look forward to!

Roasted brussels sprouts, a little orzo pasta, and chickpea/mushroom “meatballs”. Popsicles and some sour watermelon candies for dessert 🙂

Nothing too interesting over here. I made spaghetti last night, so tonight its just leftovers. But we kind of like leftovers anyway.

We had leftover chicken tacos, but I also prepped honey jalapeno chicken for tomorrow night, a pork/apple/fennel stew and mashed potatoes for Tuesday, and soy, ginger chicken for salad on Wednesday. Whew! A lot of cooking, and we end up eating leftovers!

I’ve made it before, and it’s yummy! It also freezes well, which will help me fill up the freezer for post-baby next month!
