suba, or maybe rayuela? both on the les, so lots of bars and clubs nearby. sala or agozar (both on bowery) may also work. xicala is a really nice wine bar with some (limited) tapas, but is more of a hanging out sort of place than a party sort of place.

What about Latin Caribbean? Ideya in Soho has great food and good prices or Calle Ocho, although it is uptown. Also Brazilian might be nice as well. Try Carnevale (they have a woman in Brazilian carnival dress come out and dance at various points in the evening) or Casa. Also Yuca Bar in the East Village is lively as well with good food.

I like Rosa Mexicano, they have great fresh guacamole and drinks- this is mexican and not sure if you’re looking for something different

You should totally go to Son Cubano in MePa (meatpacking district). It’s a cuban restaruant with the BEST cuban steak salad i’ve ever had and the yummiest mojitos. Whats even better is after dinner it turns into a little dance club/bar with latin music and some regular music. Or, you could also go to Latin Quarter in midtown. The crowd is totally not that cool/chic but the music is great latin music!
