October brides - what food are you serving?

    So we're in the process of coming up with a catering menu, but all our caterers are like "oh, we want to serve what you love" etc.  But it's so open ended that it's hard to respond to that.  We also want to do a mostly-vegetarian wedding, possibly with stations or a variety of cuisines that compliment each other.  We've thought about Indian food, Italian, Spanish, Mexican, etc.   

    So far, I've thought maybe some kind of apple or pear salad, maybe with some brie as a salad, or maybe a pumpkin or sweet potato soup.  

    As possible main dishes, some kind of vegetable lasagna or some kind of marianted tofu curry dish and maybe a salmon or shrimp dish...but I need more ideas!  

    What flavors and styles are you going for for your wedding?  Is anyone doing stations?  How did you get them to compliment each other and not feel like a food court?

    Wish I could help - we haven't made it to that point yet!

    My fiance says that he and my dad are going to pick out the food. Lord only knows what that meal will end up looking like, LOL.

    A wedding I just attended 2 weeks ago had a smorgasboard of food, literally everything you could imagine, Indian/Chinese/Mexican/Japanese food tables, cheese, cold-cuts, fruits table, sandwich table, pasta table, West Indian food table. It was like a food court, but I must admit, as a guest it kind of rocked....maybe this is because I will eat anything....

    Good luck though - your ideas so far sound delicious!

    We are serving vegetarian Indian food and Middle Eastern meat dishes.  So far we are trying to coordinate with two caterers to serve two rice dishes, two vegetable curries, yogurt-mint raita, Lebanese kibbeh, pomegranate chicken and a saffron-yogurt dessert.  My fiance is Indian and I am Lebanese, so we are trying to respect both of our backgrounds with our food choices.

    I'm a little bit grateful our venue gives us a menu to choose from.

    I love the idea of food stations -- I was at one recently that was absolutely brilliant, lots of space around all the dishes and it looked lovely. You could theme by cuisine, rather than meat/veg or whatever, to give it more of a theme.

    What we did with our catering proposals (we haven't selected our caterer yet - doing tastings now...YUM!) is tell them the types of food we like and then ask them to make suggestions.  We're looking at it as we love to eat, but they're the professionals.  Just make sure that you have things heavy enough to fill people up if you're going mostly vegetarian - I love the soup idea (we're doing it too).  What about a "soup shooter" station - perhaps with mini grilled cheese on the side?  You could also do this as a passed app.  Other passed apps like risotto balls, mini Caprese (fresh mozz ball, cherry tomato, basil lead), some sort of hot/brie tartlet, etc.

    Are you also going to have a seated portion of the meal?  Is this a dinner?  If so, you may want to see if you can offer guests a choice - vegetarian or fish/chicken/beef main meal.  (And if the caterer fights you on it, there are plenty who won't...businesses aren't doing great right now)  If you go with fish, I'd probably offer either salmon, halibut, or talapia since those are fairly well-know fish that aren't too "fishy."  Unless you know most of your friends and family love curry, I'd probably stay away from it (just the smell often makes me a little nauseous)

    I think your ideas are wonderful.  I'm not a vegetarian and would be very satisfied with everything you listed.  It sounds very yummy and fun. Maybe give the caterers what you have come up with so that they see your "vision" and offer additional suggestions.

    We're having 2 (undecided) passed apps and serving a traditional BBQ for dinner.  It fits our budget, our guests, and our venue.

    I got married this October & we served 2 pasta dishes: garlic chicken alfredo & beef lasagna w/ garlic bread. But first there was salad and during the cocktail hour we had bruchetta & a big cheese board w/ breads & crackers.

    My decision for food was based on our theme, we had a "Country Italian" theme so the obvious was Italian food, and since pasta is our favorite we went with the two pasta dishes.

    We're definitely going with a theme for our catering menu...

    As guests arrive for the ceremony they will be offered hot apple cider and apple cider donuts

    Cocktail hour will have an international cheese station and crudite stations, as well as a smoked fish station, which will  include sushi and steamed mussels.

    Passed apps will be harvest veggie risotto fritters, duck confit pasties with apple chutney and pot roast amuse bouche (shredded pot roast in a mini-phyllo dough cups with a veggie slaw on top). May add in the mini chicken pot pies they offer...sounds cute! lol

    Dinner will be three choices:

    1) Lamb shank with polenta

    2) Crispy boneless chicken with a cranberry orange sauce and wild rice

    3) Butternut squash ravioli with brown sugar sauce

    Our cake is a will consist of three tiers...two tiers of spice cake with fillings of caramel buttercream and apple preserves on alternating layers and one tier of red velvet cake with chocolate truffle filling.

    OMG...I am so hungry now!! lol!!

    i love the idea of veggie lasagna, pear salad, and pumpkin soup.  so fitting for a fall wedding!  what do you think of a pasta station?  i feel like those are fun... or a baked potato station with various toppings?  i like aplusb's idea of asking the caterers what type of menu they would come up with after telling them your preferences... and then getting to taste the menu items :)

    I am a vegetarian-hopeful-trying-vegan and my FH is a total meat-and-potatoes type fella. We are going to either have Italian or Mexican.

    Here our menu Charleston wedding so we're going with comfort food w/ souther flair.

    Apps: Tomato Tartlettes and Low Country Egg Roll (filled w/ pulled pork and grits w/a  jalapeno marmalade)

    Stations:

    1) Soup station served in mini mason jars - She Crab, Tomato Basil, and not sure of the third - served w/ mini grilled cheeses

    2) Shrimp and Grits w/ chef sauteing shrimp

    3) Beef Carving station with mashed potatoes and rolls

    4) Salad Station with make you own wedge salad or salad skewers

    We're going to start with a par and candied pecan salad but our meal will be what I'm calling "served family style" we're going to have huge grills and doing surf and turf. My parents own a restaurant so we are at a huge advantage.

    Pumpkin soup for a fall wedding sounds amazing! Vegetable lasagna sounds great too! We are doing a traditional English Sunday roast- the groom is from England!

    We are having a Maryland wedding, eastern shore even. So we are trying to make it as local and seasonal as possible.

    -crab dip, fresh veggies, fruit, cheese, scones for happy hour

    -Crab cakes, butternut squash ravioli (for all the veggie heads, I lean that way too), sweet potato sufle,baked apples, fresh greens salad, hot seasonal vegtable, muffins and rolls on the table, mushroom oyster stuffing.

    -Locally made cake and amish pies for dessert

    we're doing 2 carving stations- one will be turkey, and the other a orange glazed ham. then we're doing cheesy mashed potatoes made from scratch, homemade stuffing with gravy and cranberry sauce, an amazing spinach salad and a dessert table which includes cannolis, apple pie, cheesecake, brownies and cookies. we're also doing hot apple cider, and hopefully some harpoon cider will show up Smile

    Salad-mixed greens, apple, cranberries, blue cheese, onions, maple vinegarette

    Entrees- mint crusted rack of lamb, and grilled halibut with grapefruit buerre blanc, mushroom risotto

    Fire roasted veggies, smashed red potatoes

    We finally decided on our coctail hour:  Since the dinner is BBQ  and we are at the beach we are going with seafood for teh coctail hour

    she crab soup and hattaras clam chowder shooters  ***  shrimp on miny grits cakes  ***  cocktail shrimp  ***  little neck clams on half shel;  ***  fried clam strips *** smoked fish platter ***  seard tuna *** crab cake bites ***  sushi *** cheese, fruit, veggie platters *** oh yes and i cant for get the mini pigs in the blanket and bagle bites (the kids would not forgive me if i did not have them)

    Hmm. Well, we're having a dessert reception. Cake, wine, little desserts and finger foods, featuring some specifically fall themed ones when possible-pumpkin flavor, chocolate leaf decorations.

     

    One of my best friends had a late October wedding. They had punch in a pumpkin-literally, a real one. It was so neat! They also had butternut squash soup (very good) turkey, stuffing and roasted potatoes.

    We're having more of a casual celebration of love. We're getting married on the beach and having a tented reception just up the hill. For cocktail hour we're having a fresh fruit and cheese as well as crab dip. We'll be having bbq pork, bbq chicken, corn, homemade mac and cheese, baked beans, slow and potato salad.

    We are having a champagne/ bloody mary/ mimosa brunch that I am pretty excited about!  Who doesn't LOVE brunch... really?! 

    Our Menu:

    Eggs Benedict, Cheese Blintzes with fruit topping, Omelet Station, Potatoes, sausage, bacon Carving Station with meats, Roasted Chicken, Vegetable Pasta, Flaming Cherries Jubilee and of course our cake!!!

    Yummy!

    Our entree dishes are going to be pork tenderloin with a Normandy style sauce and walnut crusted chicken with a horshradish cranberry sauce. Since you are vegetarian, I guess you won't find those appetizing, but our caterer came up with what I think are amazing fall salad & side dishes:

    Field greed salad with dried cranberries, feta and grilled pears

    Pumpkin risotto with hearts of palm and leeks (this was soooo delicious, we had a whole plastic container left over from the tasting and I ate it all in a few days!)

    Roasted sweet potatoes and red potatoes with sugar snap peas

    Grilled vegetable mix

    Our caterer offered to do stations for us, but with our venue it wouldn't really work and would feel kind of awkward, but I like the idea! Having a station for each food nationality would actually be pretty cool. Pumpkin or sweet potato soup sounds really good!

    We are marrying in Thailand in August but having a big reception at home in October. We are doing passed hors d'oevres and  stations of Thai food-one with soups, one with salads, one with curries, one with noodle and rice dishes.

    Cocktail reception, theme is "An Elegant Family Reunion" so we're serving classic American comfort food with a gourmet twist.

    Tomato soup shooters with a cheese crisp (tomato soup and grilled cheese)
    marscapone risotto balls (mac and cheese)
    crispy potato gratin (fries)
    mini coney dogs & prime rib sliders (burger, hot dogs)
    mini crab cake 'cause we live in MD...
    Dessert bar with kettle corn, mini cupcakes, cookies, and mini pies (apple, of course)
    Plus salad, fruit, and cheeses.
