That sounds lovely! I am having an October wedding & my theme is vintagey/country. I also am wanting to use mason jars, floating candles, & burlap! Here are few things I plan on incorporating into my wedding. I hope they can provide you some inspriation?
I thought it would be cheaper to make the burlap banners, but after a quick trip to my local Michael’s & a 40% coupon, i found it under $10 (every week Michael’s gives out a 40% off coupon in our paper…not sure if you have one or something similar).
I found Walmart to be the cheapest for Mason jars. I’m not sure if you are interested in tinting them as seen in one of the pics, but I found a tutorial for that too:

A wedding I went to last Autumn was rustic and the bride did TONS of DIY. Lots of mason jars, twine, burlap, and neutral colors.
She also used wood cookies to put the cake on, and also for the centerpieces to sit on. It was super cute and fit the theme well.
For place cards, her hubby made a display with sticks that looked like a wide ladder. The cards hung off the rungs of the ladder with twine. They used paper luggage tags and a stamp set that looked like a type writer to print the names.
