I would definitely go with trash cans. It would be awkward to have someone walking around with a trash bag!
Are you having caterers? If so, they should take care of cleaning up the trash--like people would bus tables at a restaurant.
If not, I'd consider hiring a couple of people to do it, but they could carry trays or bins to put the trash in, and then empty them elsewhere, not infront of the guests. Good luck!

I would find some big trash cans but then try to dress them up a little so they aren't big eyesores in the middle of the reception area. Like maybe find something in your colors that you could wrap around the base of the trashcan to make it blend in. Or get ones that you could spray paint to match your colors. And place them in an area that is visible so people know they are there and what they are for but not so in the way that they become a huge inconvience or stumbling point or take away from your decor.
BTW, I don't think you sound snobby at all. This isn't Christmas where you're trying to pick up all the wrapping paper..it's your wedding!
Just order the garbage cans and don't even mention it to you mom. It's a minor detail right?
I've done a fair bit of event planning and I know that this is the kind of thing that gets over looked. If you just put them in place without making a big deal about it, what's she going to do? Throw the garbage bins out of the tent?
It just makes sense, go for it.

But neither do I. We are doing a very family wedding in Puerto Rico in my inlaws house... we are renting a tent and everything. today i had a big discusion with my mom about trash! i was asking her if we should buy big trash can to put like three around, but she just want to have trash bags and have somebody moving around with the trash bags to pick up the trash in the middle of the reception, i told her i didnt like that idea and then she accuse me of becoming a snub!!! omg!! the thing is i dont even know what is a good idea for handling the trash in a back yard wedding. we are having a buffet and only 55 people... what can i do??
