and I should also add that I dragged my mom into this project, which is so not fair. Such a bad decision. I just want to cry :(
Oh honey, I'm sure it's not that bad. After the wedding you and your mom will laugh about this. I'm sure she's thrilled that she got to help you with this. My mom would be really excited and happy. Buy yourselves a bottle of wine and enjoy some of the rejected cupcakes as your reward....
I totally know how you feel!! I make chocolate covered truffles for gifts at christmas time, and my fiance and I thought we should do that for our favors!! We started and its been a total disaster from the start. Making truffles in the height of heat and humidity of summer is completely different than doing it in December's cold dry air.
The chocolate comepletely seized on one batch, the coating bloomed on another, and we have had to get up at about 6 in the morning just to be able to coat them properly without the tempered choclate being ruined. Its been a bit of a nightmare.
We decided to round out our favors with purchased baked goods, so we only have to do about half the truffles we had intended. We have only two more batches to make, thank goodness!

yikes! don't beat yourself up over it. at least you had good intentions. this will give you and your mom something to laugh about down the road....it's not all bad. good luck and i'm sure everything will turn out perfectly!
Oh no! That's so frustrating.
I know when I first got engaged, I wanted to control every little thing, and make so much of it. My dear father reminded me that I would have enough to worry about and didn't need the extra stress of baking my own wedding cake. He's good at bringing me back to my senses. lol
Thanks of for sharing. I will store this away for when I have one of my crazier DIY moments.
Just as an update to my disasterous cupcake fiasco - the cupcakes were a huge hit. They tasted delicious and out of the 400+ that I made we only have about a dozen left. Our caterer made the ugly ones look pretty by removing them from their wrappers when they were served. So things really did work out ok in the end :)
Everyone loves cupcakes no matter what! I'm glad it all turned out in the end, and that you have some leftovers to enjoy!

Was to make the freaking cupcakes for our wedding. I am so pissed at myself right now. I tested at least a couple dozen times, I did everything I possibly could to get this right. Then, everything goes wrong.
First, my mom's oven jacks up 5 dozen cupcakes. She calls a friend who is away and we pack up an entire Jeep FULL of baking stuff and kitchen aid mixers. The friend's Thermador oven rocks. But, it's humid today and apparently even though I tested the @#*! vanilla cupcake recipe in HOT HUMID FLORIDA at least a dozen times, it does not turn out like it normally does. We lose at least 150 cupcakes. They look like total disasters.
Now, 12 hours later we have a few hundred cupcakes, sitting on the friend's counter (she's away til tomorrow night) and I'm praying that they are ok in the AM when I'll return to frost them.
Next up, where the h*ll am I going to freeze them all? My calculations were way off. The boxes I bought to freeze them in are waaaaaaaaaay bigger than I anticipated with tons of wasted space.
I would have gladly paid $3 a cupcake to avoid this mess. Thank goodness there are still two weeks til our wedding. I just hope they survive their time in the freezer as well as the test subjects did.
Ladies, DO NOT bake your own cupcakes. I am a huge baker, this is my biggest hobby. I was ADAMANT that I wanted to bake my own cupcakes. All I can say is thank God I had the good sense to have a professional decorate a fake "cutting" cake for us...and at least the cupcakes taste good!
