So sweet! Congrats on your 1st anniversary. I had a co-worker a few years ago who was on his 9th (YES 9) anniversary with their wedding cake. He said it was well, kinda icky, but his wife was all about it, so they have a bite every year.....tooooooo cute. AND they're an Encore couple!
9 years...of the same cake....
I guess if its important to her, and its still "Safe" to eat, then why not!
i wonder if the same baker who did their original cake is still around, maybe for year 10 they can have a fresh cake to start the new decade together. hehe

We had our first anniversary last month, and since we ate the top tier of our wedding cake immediately upon landing from our honeymoon (i couldn't control myself) We asked our baker to do a mini version for our first anniversary.
and to cut the anniversary cake we used the same cake knife from the wedding (it was my parents wedding cake cutter too)
